8800 Ultra or 8800 Ultra Superclocked?

Yes, I get what over clocking is, but my concern is temperatures. I'm planning to catch them on SLI and I already have the PSU covered (1010 Watts). I be also considering water cooling, but what if it leak?

Then purely overclock some GTX's and save yourself $200+. Because the Ultras are merely factory overclocked GTX's.
I suggest not using water cooling since theres a slight possibility of leak. You may want to invest in an Antec 9 Hundred (use all/by extra fans) or an Nivdia (spelling I don`t know incorrect) SLI case...(I believe Coolmasters manufacture the case.)

You may also want to invest contained by a temperature determine that uses one of the expansion bays.
If it leak you're screwd, besides that water cooling really isn't the approach to go at adjectives. You could put in another admirer, possibly 2 and that will suffice, but my advice would be to forget overclocking as it can fry the mainframe. You'd be better sour just upgrading or buying a hot computer altogether.
